Comforting lentil soup
This comforting lentil soup is as simple as it gets! Made with usual ingredients, it’s a life saver if you need a quick meal.
4 servings • PREPARATION: 5 minutes + 8 hr soaking • COOKING: 30 minutes
INGREDIENTS
A bit of oil
1 chopped onion
750 ml (3 cups) chicken broth
250 ml (1 cup) tomato juice
325 ml (1 1/2 cups) green or brown lentils, soaked overnight
250 ml (1 cup) frozen mirepoix
10 ml (2 tsp) cumin
10 ml (2 tsp) turmeric
Salt and pepper
1 small hot pepper
PREPARATION
In a large heavy-bottomed pot, sauté the onion in oil. Add the remaining ingredients and simmer for 30 minutes.
Mirepoix is a mix of finely diced vegetables, usually onions, carrots, and celery. If you have the time, you can prepare it yourself, blanch it for a few minutes in boiling water, and freeze it for quick meals.
